This week our Edinburgh food challenge is going to focus on including one new vegetable on your plate every meal. It can be the same vegetable for the whole week or you might want to make it a little more exciting and aim to buy a different vegetable every day of the week.
When eating your meals, especially your evening meal its a good idea to have at least two different types of vegetables on your plate – if you can stretch to three even better. It is very easy to get into a habit of liking and only cooking the same type of vegetable which is a shame because there is such a huge variety of them in our shops.
So rather than give something up on our food challenge this week I want you to add something. Add a vegetable you have always wanted to try or one you hated as a child (you may like it now as an adult) or a vegetable you would never normally eat and see how many different new varieties you can add into your weekly eating menu.
Remember, it doesn’t only have to be eaten with your main meal, take some raw veg to work with you and eat that at lunch time with houmous or if you have a food you love like crunchy peanut butter try putting it on something you may not enjoy eating as much like celery for a tasty snack.
